As opposed to the natural emission of ethylene produced from fruits as they mature, cut fruit emission is triggered from wound ethylene, which can be 10x or more of that from intact fruits. This ethylene creates a number of responses in cut-fruit, least of all the darkening of berries, and the leakage of juice from the fruit as the ethylene weakens cell membranes, leading to collapse and fluid leakage. Leading retailers and processors have added RYPEN pads to their most sensitive medleys and berries, protecting the fruit from the ethylene enabling them to sell better looking and eating fruit.

Fresh cut-fruit deteriorates far more quickly than whole fruit, and this can cause issues for both the retailer in terms of supply and freshness for the consumer.

Fresh cut-fruit, a convenience-oriented product sold in supermarkets, is a growing segment in the produce industry. Major producing regions include the retail markets of US, Europe, and increasingly Asia. Production occurs year-round, with seasonal peaks aligning with fruit availability such as domestic berry seasons. Popular offerings include mixed fruit salads, pineapple chunks, melon mixes, and berry assortments.

Key consumer markets are North America, EU, and wealthier urban areas in Asia. The industry faces challenges in maintaining freshness, shelf-life and reducing waste. Demand is driven by health-conscious consumers seeking convenient, ready-to-eat options. Food safety and packaging innovations are crucial in this sector, to help extend the quality life and enjoyability of this premium format.
