As opposed to the natural emission of ethylene produced from fruits as they mature, cut fruit emission is triggered from wound ethylene, which can be 10x or more of that from intact fruits. This ethylene creates a number of responses in cut fruit, least of all the darkening of berries, and the leakage of juice from the fruit as the ethylene weakens cell membranes, leading to collapse and fluid leakage. Leading retailers and processors have added RYPEN pads to their most sensitive medleys and berries, protecting the fruit from the ethylene enabling them to sell better looking and eating fruit.
