• Tenderstem Broccoli
    Greener for longer
As this cultivar is usually packed ready for retail immediately, adding RYPEN into packs ensures ethylene protection, delaying yellowing.
  • Tenderstem Broccoli
    Crisp, fresh and delicious
A key indicator of freshness in Tenderstem is it’s crunch – extend this with RYPEN.
  • Tenderstem Broccoli
    An aroma of freshness
Over-ripe Tenderstem has an unappealing aroma, with RYPEN shelf-life can be extended to delay this issue.

Many leading producers of Tenderstem® / BIMI broccoli have invested in new packaging solutions that have extended shelf-life of traditional stretch film and Non-Modified Atmosphere Packaging (MAP). This extra shelf life has led to growth in the category; however, MAP packaging concentrates the level of ethylene within the packaging.

A flip side of this is that Tenderstem / BIMI is technically a flower, this means that when the “vegetable” is exposed to ethylene, it will start to bloom, resulting in the emergence of yellow flowers, so RYPEN technology greatly compliments the MAP formats, reducing the level of yellowing seen in packs, increasing sales and reducing waste.

  • The Kailan hybrid (Tenderstem / Bimi) has higher respiration rate and ethylene production than conventional broccoli cultivars (Ginés et al., 2013).

Comparative behaviour between kailan-hybrid and conventional fresh-cut broccoli throughout shelf-life, LWT – Food Science and Technology, Volume 50, Issue 1, 2013, Pages 298-305, ISSN 0023-6438

Ethylene can build up inside the retail packs, this is exacerbated with fluctuations in temperature during supply. But by moderating ethylene levels RYPEN has proven to extend shelf-life significantly.
  • Waste levels reduced by 30%
  • Shelf-life extended by 4 days
  • Up to 50% reduction in quality defects
  • Delayed yellowing of Tenderstem

Tenderstem® Broccoli, also known as Bimi® or Broccolini® in other markets, is a natural cross ‘hybrid’ of two plants: Calabrese brassica and Chinese kale, delivering an ‘eat all’ stem that is the basis of it’s powerful nutrition profile.

Developed by Sakata Seed Corporation in the 90’s and managed internationally by branding agency Coregeo, TSB is a very fast-growing designer vegetable in many market cuisines due to its convenience, taste and health properties.

Anyone who’s seen TSB in a retail environment will also probably have noticed the tiny yellow flowers emerging as the product ages on shelf or after purchase at home. Although natural, this visually observed change can lead to a spike in retail store waste and put customers off, meaning a fall in sales.
